Olive cultivation and pruning

This course is addressed to those who own or are thinking of buying an olive grove as well as to those who, though not owners, cultivate olives or are interested in the subject.

This is a practical course, with some theoretical lessons and much field work.

A minimum of four students are required.

The programme for the course is:
- Elements of botany
- History of the olive and of olive oil
- The olive tree in Italy
- The olive tree in Tuscany
- Planting the olive
- Trimming the olive
- Other aspects in the cultivation of the olive
- The olive grove
- Collecting the olives
- From the olive to olive oil
As part of the course there will be visits to olive groves and presses in Tuscany.
